But since A) I can only have Panera when we go cross-border shopping, and B) I can no longer have these muffins since I’ve been diagnosed with a dairy and gluten allergy, those muffin days are over.
Time to try out another new recipes that is allergy friendly. This time I use the pumpkin-spice muffin from the BabyCakes cookbook.
In the New Year I plan on going to one of their bakeries to try out more of these goodies, however for now I’ll try making my own. They turned out pretty good, very moist and not at all grainy which can sometimes happen when baking gluten free. Not quite Panera… but pretty close!
