Classic Crumb Cake

This weekend I used another recipe from The Allergen-Free Baker’s Handbook. It is described in the book as a classic coffee cake. You can also watch the author Cybele Pascal make this recipe in a Martha Stewart clip here on the author’s website.

This was another easy recipe! While it was baking Mr.K and my dad were downstairs working on finishing our basement, they could smell the cake baking and were eager to try a piece when then came up. It tasted great as expected, and I’m sure I’ll be making this one again!

Spring Has Sprung!

This week over at Gussy’s the Inspiration Workshop prompt is Spring!

Yesterday the temperature went way up to 54ºF here and the snow has started to melted away finally! There’s still a bit lingering but soon it will all be gone. Spring is one of my favorite seasons, especially when you can smell the air changing.

Here are a few things that caught my eye this week while thinking of the warmer weather to come.

After being back in Orlando last week and having more treats at the Babycakes Bakery I came home with a craving for some donuts! This past weekend I tried a recipe from the Babycakes Covers the Classics cookbook.

I made the plain cake donuts, with cinnamon sugar sprinkled on top. They tasted pretty close to what you get in their bakery, still warm from the oven is best!

Now that I have a donut pan I’ll have to try some different flavors from this cookbook.

Disney Deja Vu!

Last weekend I was lucky enough to go back to Disney World in Orlando to watch my friend run the Disney’s Princess 1/2 Marathon. The morning of the marathon we arrived at Epcot before the sun was even up! The race began at 6am.

And here is her medal:

Later on that day we went to Downtown Disney for lunch and then over to Paradise Island when we needed a break and decided to go watch a movie at the AMC.

This was a dine-in theatre, and while we didn’t eat there is was impressive enough to take some pictures inside!

Comfy chairs to relax in after being up extremely early on marathon day!

Every set of seats in the row has a counter to eat at, just press the button on the ledge for the waiter to come and take your order!

We had stopped at my favorite Babycakes Bakery on the way over to the theatre and grabbed some snacks for the movie.

The next day was another fun day at Hollywood Studios.

First thing we did? Make a beeline to the scariest rides at the park of course! First the Tower of Terror, and then the Rock ‘n’ Roller Coaster featuring Aerosmith.

Yes this roller coaster does go upside down! I have no idea how many times because my eyes were closed the whole ride! We stayed at the park until evening, then went back to the hotel for an early night.

On our last day we went to Magic Kingdom.

We met up with Cinderella’s evil step-sisters and step-mother.

Since it was a warm day we took the plunge and went on Splash Mountain too!

It was a busy long weekend, but so much fun! Now back to winter for hopefully only a few more weeks!

Blueberry Boy Bait

This past week I made this moist, buttery coffee cake with its crisp, cinnamon-sugar topping from The Allergen-Free Baker’s Handbook. It’s based on an old-fashioned recipe from the 1950s, called Blueberry Boy Bait, a coffee cake named for the effect it had on teenage boys. You can also find the recipe here on the author’s website.

It was easy to make, and tastes great, definitely a hit in our house. The hardest part is waiting for it to bake for an hour in the oven! I can see how it doesn’t last very long as the book claims. I kept half in the fridge and it almost lasted a week, so today I made another.

This is one of my favorite recipes in the book so far, and I’m sure I’ll be making it many more times!

Dreaming of Organizing

This week over at Gussy’s the prompt is Organization!

Organizing, sorting, and just general cleaning up is something that is always there waiting to get done! Here are a few ideas I hope to use one day.

These wall shelves are so neat and everything has a place!


I really like these white bookshelves.


And more white in this bright office!


Here’s a great idea to organize your jewellery.


If you knit and have lots of wool like me I’m sure you’ll want to use this idea.


And one last thing, to gain more space in the garage.

More Disney

Last bit of our trip to Orlando today!
We spent a day at Disney’s Animal Kingdom, here are some of the pictures from that day.

Expedition Everest: We rode this roller coaster 3 times!

Then we moved on to Kali River Rapids.

We went twice during our day there. We brought rain ponchos with us and I’m glad we did! The first time we stayed pretty dry…

The second time we ended up like these people above, even with the rain ponchos we still got a bit wet. As the sign says “You will get wet. You may get soaked!”.
And yes the photos were taken with a waterproof camera. 😉

We also took the Kilimangaro Safari to see the animals.

Animal Kingdom also has a parade with the Disney characters everyday.

The Tree of Life connects all of the themed areas of the park.
